Peach Bread
Today is the first day of August and the beginning of National Peach Month. I originally featured this recipe on my first blog, Jem of the South, and thought it was only fitting that I bring this recipe out for a “rewind” because it was just that good! Peach Bread adapted from i am baker
2 cups white sugar
1/4 cup packed brown sugar
1 cup room temperature butter
2 cups all purpose flour
3 eggs
2 1/2 cups peaches peeled and sliced
1 tsp salt
1/2 tsp cinnamon
1 tsp baking soda
Preheat oven to 350 degrees
Cream together butter and both sugars. Add beaten eggs, peaches, salt, cinnamon, flour, and baking soda. Stir until combined.
Pour into prepared dish.
I used 2 loaf pans and had some batter left over for a few muffins. I cooked the bread for about an hour, but watch it as you know that oven cook times vary.

The bread was a hit with my family! My Aunt Jackie described how the bread turned out best when she said, “It reminds me of bread pudding” and she couldn’t have been more correct! So you know what that meant? Had to buy ice cream and add it along side the bread and I must say it was Fab-u-lous!! The reason I believe the bread was so moist was because I took time to squeeze the cut peaches so all those juices really went to work in keeping the bread moist.
